Most people think that Jesus, being Jewish, must have had dark hair. However, its not out of the question for red hair to be found in the Middle East. In 2014, a gathering of about 200 red-haired Jews came together in Israel. King David is known to have red hair as well.
The proof comes from an actual historical letter from Pontius Pilate to Tiberius Caesar. Pontius Pilate writes:
One day I observed in the midst of a group of people a young man who was leaning against a tree, calmly addressing the multitude. I was told it was Jesus. This I could easily have suspected so great was the difference between Him and those who were listening to Him. His golden colored hair and beard gave to his appearance a celestial aspect. He appeared to be about 30 years of age. Never have I seen a sweeter or more serene countenance. What a contrast between Him and His bearers with their black beards and tawny complexions!
Another source is from the sleeping prophet, Edgar Cayce. Falling into a trance state, Cayce would diagnose illnesses and describe past events. Cayce talked often of the life of Jesus Christ. He described Him as having blue eyes and golden red hair.

I recall reading that Pontius Pilate kept a daily journal of events which was sent on a weekly basis to Rome. Supposedly one of his journals found in the Vatican talked of his encounter with Jesus at least 2-3 years before he condemned him.
Pilate was on his way to his office one morning, and happened to notice a young man lounging against a tree in the village square. The young man was observing everyone going by. When Pilate took his mid morning break, the same young man was conversing with 2-3 men. Then at his lunch break, Pilate saw a huge crowd around the man. They were lining up to talk to him.
Pilate figured this must be the Jesus Christ he had heard about. Pilate gets in line to see Jesus. He notes he was a couple of inches taller than the average jew. He also describe him as having blonde hair parted in the middle, but as not being particularly noteworthy. However, when Pilate gets close enough to glance for a moment into the eyes of Jesus, he realises where his power lies. Jesus has eyes that are melting with empathy. Unnerved, Pilate gets out of line and goes back to his office.
Don’t know if any of these accounts by Pilate are real. However, undoubtedly, some early Christians did hear what Jesus actually looked like physically. This may have been passed down. Also, calling him a Nazarene may be a reference to Jesus having great (magical, holy) wisdom or blue eyes. To this day, people in the Mideast wear a blue eye to ward off evil. It is said Jesus was from Nazareth (perhaps a town of blue eyed people). People of blue eyes were also associated with the sea (possibly foreigners who were sailors and traders who settled in Judea).
